Chicken Noodle Soup, Filipino Style
(Sotanghon)

2 cloves garlic, chopped
1 small onion, chopped
1/2 teaspoon vegetable oil
1 pound chicken breast, cubed
4 ounces cellophane noodles (sotanghon)
1/2 cup mushrooms, sliced
Salt and pepper to taste

Soak the cellophane noodles in a bowl of cold water. Meanwhile, in a large pot, sauté the garlic and onion in vegetable oil over medium heat. Add the chicken and sauté for an additional 5 minutes. Pour about 4 cups of water into the pot and allow it to come to a boil. Reduce the heat and simmer for 10-15 minutes. Drain the cellophane noodles and add them and the mushrooms to the pot. Cook for an additional 5-8 minutes. Season with salt and pepper to taste.

Sinigang

1 small onion, chopped
1 small tomato, chopped
1/2 teaspoon vegetable oil
1/4 cup lemon juice
1 pound pork, cubed
2 cups spinach, bok choy or other leafy vegetable
Salt and pepper to taste

In a large pot, sauté the onion and tomato in vegetable oil over medium heat. Add the pork and sauté for an additional 5 minutes. Pour about 4 cups of water and the lemon juice into the pot and allow it to come to a boil. Reduce the heat and simmer for 10-15 minutes. Add the spinach, bok choy or other leafy vegetable and cook for an additional 2 minutes. Season with salt and pepper to taste.

Chicken Tinola

1-inch piece of fresh ginger, crushed
2 cloves garlic, crushed
1 onion, chopped
1/2 teaspoon vegetable oil
1 pound chicken breast, cubed
2 cups green papaya, cubed
Salt and pepper to taste

In a large pot, sauté the ginger, garlic and onion in vegetable oil over medium heat. Add the chicken and sauté for an additional 5 minutes. Pour about 4 cups of water into the pot and allow it to come to a boil. Reduce the heat and simmer for 10-15 minutes. Add the green papaya and cook for an additional 5 minutes. Season with salt and pepper to taste.
